PEACH COOKIES

These are soft, cake-like cookies.  If too soft on standing, place into warm 250 degree oven for a few minutes.

Ingredients

  • 1/2 cup        (1 stick) margarine or butter
  • 1  cup           sugar
  • 1                   large egg
  • 2  cups         flour
  • 1/4  tsp        nutmeg
  • 1/8  tsp        ginger
  • 1/8  tsp        salt
  • 1/2  tsp        baking soda
  • 1/4  tsp        cinnamon
  • 1/8  tsp        ground cloves
  • 3                   medium fresh ripe Peaches
  • 1/2  cup       raisins (optional) – or cinnamon chips & walnuts: 1/2 cup each

Directions

  1. Cream margarine and sugar in a bowl.  Add egg and beat until light and fluffy.
  2. In another bowl, mix flour and spices, add to egg mixture, a little at a time.
  3. Peel, pit and finely dice peaches; stir into cookie mixture.
  4. Stir in raisins, if desired.  Drop dough by full rounded teaspoons onto cookie sheet.
  5. Bake at 375 degrees 18-20 minutes, until cookies are light brown on top.
  6. Cool thoroughly on wire rack before storing.
